The following weapons were used in the anime series Spy x Family:
Pistols
Heckler & Koch P7
What appears to be a Heckler & Koch P7 is seen with a gunman who engages Yor in close quarters in the "Investigate the General Hospital" portion of the 20th episode.
Luger P08/Walther PP hybrid
A Luger P08 / Walther PP hybrid pistol is used by Agent Twilight aka Loid Forger as his personal sidearm.
Makarov PM
The Makarov PM is used by hostile Ostanians and other spies operating in Ostania.
Walther P38
The Walther P38 is seen in Spy Wars promotional material and in the animated cartoon.
Walther PPK/S
What seems to be a Walther PPK/S is used by Sylvia Sherwood aka "Handler" and all WISE agents operating under her command.
Rifles
AK-47
The AK-47 is seen with hostile Ostanians. It's seen also in the Ostanian State Security Service forces, especially with the SSS logo. Given Ostania is clearly based on East Germany, these AKs are likely based on the MPi-K variant.
SVD Dragunov
A hidden sniper uses a suppressed SVD Dragunov to fire rubber bullets at Twilight and Nightfall during an underground tennis match in "The Unwavering Path".
Grenades
Model 24 Stielhandgranate
A Model 24 Stielhandgranate by pro-isolation terrorist Keith Kipler in "Disarm the Time Bomb".
RGD-5
The RGD-5 hand grenade is seen with hostile Ostanians. Loid uses it briefly in "Secure a Wife".
Others
Air Rifle
Loid is seen using an air rifle in the OP sequence, "Souvenir".
15 cm schweres Infanteriegeschütz 33
In Loid's flashback in "Operation Strix", an artillery piece is seen that is most likely a 15-cm-schweres Infanteriegeschütz 33.
