The following guns were used in the film Universal Soldier
M16A1

Smith & Wesson Model 39
Luc Devereux (Jean Claude Van Damme) takes a Smith & Wesson Model 39 pistol from the deceased Prison Bus driver and uses the handgun to shoot GR74 (Ralf Moeller) in the UniSol truck after the UniSol truck rammed the Prison Bus and was pushing it into the Grand Canyon.
CETME
Used by the Hoover Dam Terrorist members.

Heckler & Koch SR9(T)
Used by the SWAT team at the hostage situation.
Armsel Striker/Protector shotgun
An Armsel Striker/Protector automatic shotgun is used by a UniSol during the attack on the Motel.
Beretta 92FS
(Possible) Hostage Taker with Detonator has one when UniSol GR74 (Ralf Moeller) appears as an Electrician at the Hoover Dam.
Beretta 92FS Inox
Colonel Perry (Ed O'Ross) is seen armed with a Beretta 92FS Inox pistol.
Double Barrel Shotgun
Luc Devereux takes his parents shotgun to confront GR13/Sgt Andrew Scott but doesnt use it.
Heckler & Koch P9
One of the Universal Soldier project technicians was seen pulling out a Heckler & Koch P9 from the weapon racks after GR13/Sgt. Andrew Scott (Dolph Lundgren) re-entered the UniSol truck and announced that he "relieved" Colonel Perry (Ed O'Ross) of his command (as well as Colonel Perry of his ears and his Woodland camouflage BDU jacket). The technician tried to use the pistol on Sgt. Andrew Scott but Scott killed him by breaking the technician's neck in the process.
