The following weapons were used in the anime series Persona 5: The Animation:

Pistols

Norinco Type 54

A stainless steel Norinco Type 54 is used by Ren Amemiya aka Joker as his sidearm of choice initially. In the show, it was purchased in Untouchable.

The Type 54, its air gun version branded as the McG Tkachev, is seen in Untouchable in "Steal it, if you can". Note that the wooden pistol grip replaces the black one, most likely based from the Tokagypt.
Joker confronts Asmodeus inside Shadow Kamoshida's palace during an encounter.
Joker opens fire at guard-type Shadows in "He is my other self".
Renn imagines handling the dual pistols inside an arcade building in Akihabara in the middle of "Is it our fault?".

Laser Pistol

A laser pistol that resembles the Mauser C96 is used by Goro Akechi aka Crow in "I am thou, thou art I" to shoot a chandelier's chains on the ceiling.

Another early production six-shot Bolo, with a "large ring hammer." This example was imported into the United States by "VON LENGERKE/& DETMOLD/NEW YORK" which is stamped on the other side.
Crow opens fire with the laser pistol in "I am thou, thou art I". The shape of the magazine and the housing suggests that it's based on the C96.

Light Gun Prop

Light gun props based on a generic pistol are used by Ren and Makoto in "I found the place where I belong" during a trip to the arcade in Akihabara. They're also present in the same in "Is it our fault?", being used by Ren and Shinya Oda.

SIG-Sauer P226

What's suppose to be a SIG-Sauer P226 with a stainless slide is seen with Ren in "X Day".
